Day 61: Breakfast for Dinner, on Paper Plates

DAY 61 - The water pump is still on the fritz... So it was camping-esque... whether I wanted it or not. However, sticking to my plan is ALWAYS an option when I think outside the box. It seems like I ate more than usual.... Especially in the oopsie department, goodness!

I'm completely sick of paper plates... not just because they are SO not eco-friendly, but because they are flimsy and some foods simply should not be served on PAPER plates.

-Turkey BLT on oopsie
-Ham/Swiss on oopsie with mayo
-BLT oopsie
- French toast oopsies, sausage patties & scrambled eggs with Amish swiss cheese (photo below)

I HATE serving food like this on PAPER plates (gasp!) but sometimes, with no water, you really can't be picky about plastic cutlery and such.

July 1, 2009: 27th birthday pics: PROGRESS PICS





I decided to post some pictures, which will be in the "before" category. These were taken on July 1, 2009, my 27th birthday in Howe, Indiana.

I know I am slimmer now than in these pics... thank goodness! However, it's important to note, that in these pics... I had already lost roughly 20 lbs.

I'm going to post new pics on August 1, September 1, October 1... etc.

Day 60 - Oopsie madness! Low carb or bust...

Okay, our water is out, which totally sucks. Fingers crossed it will be fixed tomorrow!

However, come hell or no water, I'm not giving up that easily.

DAY 60
- hamburger on oopsie with lettuce, tomato, onion, ketchup, mayo, mustard
- turkey blt oopsie with mayo - mmmm turkey club! (low sodium turkey, too, yay)
- virginia ham
- chicken pot pie
- raw almonds - 2 oz

I also made oopsies on day sixty, even though we had no water. I figured, I won't be doing a WHOLE lot of cooking and oopsies are so easy to slap together with some lunch meat, which I happen to have plenty of... and the good kind, too.... the kind that you ask the guy behind the counter to slice for you... that kind.

I did the dishes camping-style and it wasn't so bad, afterall. Low carb or bust!

Day 59: Atkins Diet

Ever wonder what a low-carber eats?

Day 59

Exercise: 1 mile walk
- 1 pork chop, grilled
- chicken pot pie - mmmmmm comfort food! recipe here
- mom's crazy cabbage

Weight: 274.4 -- down 3 lbs!
Height: 5'10''
BMI: 39.4

Getting my BMI below 40 means a lot to me because I'm no longer considered "morbidly obese." I know how easy it is to slip back up there, though, so I can't go being cocky or anything, now.

Day 57: Hungry all day!

For some reason, I was hungry alllll day on day 57, but then when I woke on on day 58, I did not seem hungry at all until about 5:00pm.

- 1 egg sloppy joe omelet with cheddar
- crazy cabbage
- French toast oopsie with SF syrup and whipped cream
- 3/4 grilled pork chop
- 1 piece cauliflower pizza with sf sauce, sausage, ham, mushrooms & mozz
- cheeseburger on oopsie with onion, tomato, mayo, mustard & ketchup

Crazy Crockpot Cabbage Recipe

This recipe is adapted from Mom's Crazy Cabbage. I omitted the 4 strips of bacon, added a little more meat, and stuck it all a big crock pot.

Layer in crock pot:
1/2 head cabbage, cut into chunks
2 lbs ground beef, browned with onion (season with salt and pepper)
1/2 head cabbage, cut into chunks
14.5 oz diced tomatoes - do not drain and dump on top.

Cook on low for 7-8 hours. Open lid... stir and serve...

Note: You will need a BIG crock pot for this recipe.... but it's so nice to come home to!

7-24-09

-One piece of pizza on cauliflower pizza crust with ham, mushrooms, red peppers, mozz, alfredo sauce
- One piece of pizza on cauliflower pizza crust with ham, sausage, mozz, SF sauce
- Sloppy Joe on an oospie roll
- KFC Grilled chicken thigh
- Mom's crazy cabbage
- Some pepperoni/sausage/pizza sauce/cheese (1 piece of pizza's worth)
- BLT with mayo on an oopsie roll

Day 54 Low Carb Food Diary

7-23-09

- Small serving of Pork/shrimp/zucchini/onion/mushroom/red pepper stir-fry
- Sloppy joe on an oopsie w/ sharp colby cheese
- One piece of pizza on cauliflower pizza crust with ham, mushrooms, red peppers, mozz, alfredo sauce
- Two BLT sandwiches with mayo and deluxe American cheese on oopsie rolls
- Another piece of pizza on cauliflower pizza crust with ham, mushrooms, red peppers, mozz, alfredo sauce

Raw almonds are my new Doritos!

Okay... so for the past week, I have seen zero pounds lost... and I've realized something. While I have not really eating anything "forbidden," I have been eating raw almonds like they are going out of style.

While they are healthy in moderation, something "crunchy" in the cupboard leaves me intermittently wandering in the kitchen.

My solution? I buried them in my forbidden baked goods/pasta cupboard (which I use for passing dishes) and I will leave them alone for a while. They actually belong at the store, now that I'm thinking about it.

Almond flour is awesome, so maybe I will just grind them into that... that is harder to eat like potato chips... mindlessly and without even being hungry.

7-22-09 Low Carb Food Diary

I started the Atkins diet 53 days ago... and I feel great. I'm 29.2 lbs down from my start weight of 306.4. Not bad, huh? I feel like I was hungry all day today. I need to get more vegetables in to satisfy my hunger.

7-22-09

- Open-faced sloppy joe on an oopsie roll with cheese
- Ring bologna and colby cheese sandwich with mayo on an oopsie
- 1 piece of pizza on cauliflower pizza crust with ham, mushrooms, red peppers and alfredo sauce
- Raw almonds
- SF Popsicle
